At the age of five, Chef Beau Schmidt started cooking with his grandmother by memorizing all the ingredients of her famous pancakes and setting them out for her to make, while also helping his parents with the family catering business. At age 13, he had his first job tossing pizza dough at the local pizza parlor, and at age 19, he opened his first restaurant, the Oakwood Grill.

Beau’s next move was to Crocker’s in the Valley, where for the next 9 years he was the manager and chef. His passion for the culinary arts was becoming clear and his cooking style a local favorite.

In 1993, Beau and his partner opened Beau’s Tavern in the Valley where the restaurant remained for the next eight years. In December of 2000, Beau and his staff, which includes his mother, moved their restaurant to the Fairlawn area and made their final move to the former Market Street Grille at the Hilton Akron/Fairlawn in November of 2003. Beau and his award winning cuisine have been successfully received in their new location at the Hilton Akron/Fairlawn and plan to stay for a very long time.

On the rare occasion that Beau gets to enjoy some free time, he likes a leisurely round of golf, all sports, and spending time with his children. Asian and Southwestern foods are among his favorites. He invites you to come in tonight for a delicious dinner.

Paul Cincotta

Mr. Paul Cincotta oversees the daytime restaurant operations at . He has successfully built a loyal and regular clientele over the past six years, developing many lasting relationships with business and social customers. Paul’s dedication and commitment to his profession earned him the coveted award of “Hilton Team Member of the Year,” out of 70,000 Hilton employees.

Paul started in the food and beverage industry at the age of 13, and at age 19, became the Maître’d for a posh country club in New York. Paul soon moved into management where his success won him the role of Corporate Trainer for the Beachwood Restaurant Corporation, responsible for the opening of over 42 restaurants. Paul traveled worldwide opening restaurants from Australia to England and throughout the USA. Needless to say, Paul was hooked on the food and beverage industry but was resolved to finding the perfect position closer to home in Fairlawn, Ohio. This search brought him to the Hilton Akron/Fairlawn in August, 1998.
